For me Sunday is meal prep day and this is one of my favourite recipes for filling up your tupperware. Packed with protein, healthy carbohydrates, vegetables and flavour this dish really is a must-make. The best thing is it is really simple and doesn’t take much time at all!


  • 300g wholewheat pasta
  • 200g feta cheese
  • 3 chicken breasts
  • 1 jar of tomato & basil pasta sauce (350g)
  • 3 crushed garlic cloves
  • 2 red onions
  • 1 leek
  • Fresh chilli
  • Mixed herbs
  • Handful of pitted green olives
  • Handful of fresh basil leaves
  • Optional: bacon

Ingredients for Tomato & Chicken Pasta


  1. Boil the pasta for approximately 10 minutes until al dente
  2. Whilst pasta is boiling, chop the chicken breast and cook in a pan until cooked through
  3. Fry the onions and leeks with a teaspoon of coconut oil until softened
  4. Once pasta is cooked, drain and add the onions, leeks and chicken along with the tomato and basil sauce
  5. Add mixed herbs, chilli and stir until all ingredients are well mixed
  6. Pour into a serving dish and place feta cheese and fresh basil leaves on top to garnish
  7. Optional: Add cooked bacon for additional calories
  8. Enjoy!
